I’ve been seeing people on TikTok rave about Julia Child’s cheese cloth method on turkey, so I decided to give it a try. I softened 2 sticks of butter, added rosemary, thyme, sage, garlic and orange zest and turned it into a compound butter. What didn’t go go under the skin got melted and was used to soak up into the cheese cloth. After 1 hour on the smoker, I draped the cloth over the breasts and tucked it in. The result was very juicy and flavorful white meat. Definitely recommend!
