To me, this is one of the most important differentiators between a good and great Mexican restaurant.
And a bit of a disappearing tradition/investment in space, griddle and abeulitas labor. With more and more so called "authentic" Tex Mex restaurants all serving the same lame Sysco supplied flavorless tortillas, like we can all buy at the local grocery store.
Please list the restaurant name and city in Texas with your reply. I might just create a database for this. I'm tired of having my hopes dashed when my plate and tortilla warmer arrives.
Oddly enough, the first two that come to mind are some pretty low end locations. Found all over the state.
