This Christmas I am smoking prime rib. I have smoked prime rib before, however I have only smoked a single prime rib -- typically 4 bone (small end) weighing in around 10 lbs.
This time I am going to smoke (2) Prime ribs -- 4 bone small end approx. 10 lbs., and a separate 3 bone large end approx 10 lbs.
Question is: typically I pull at 125 degrees which normally at 250 degrees is about 35 minutes per pounds. Would adding a second rib roast add to that cookimg time if they are similar in height / weight, or is the timing generally going to be the same?
Pellet Grill -- plenty of room for two bone in prime ribs (won't be over crowded). I plan half way through the cook to swap spots with each rib roast.
