I've been a couple of times but probably won't be much help. Flight & sleeping arrangements were all provided by good ole uncle Sam.
Everything is much more expensive than surrounding areas because Dubai exhists for foreign tourists and big $$ business. With that being said, look at it like Arab Las Vegas.
You can do a lot of sightseeing and stay in very nice accomodations on a very reasonable budget but if you want to blow stupid big dollars on extravagance, it's readily available at every turn.

Alcohol is served to non-locals in the hotels but under no circumstance should you walk outside drunk.
Do not take pictures of Mosques, anything industrial, or people (without their explicit permission). You will be arrested. The religious police are not as common there as everywhere else out of city.
Everything is negotiable as well. The souq (market) merchants will almost always tell you double the price they are willing to sell for. Do not hesitate to offer a lower price and start walking when they refuse to budge. Usually you'll hear "Ok habbi, special price just for you."

Dubai is pretty safe in all the tourist areas but beware adventuring too far out alone. Blend in and leave the MAGA and VFW hats at home.

Bonus tip: camels are like seagulls there. If you drive near a trash landfill they'll be out there foraging. Seriously.

Don't ever stand behind them within 20 feet or so, either. Those bastards piss directly to the rear with the force of a fire hose, and their urine is like a thick syrup. I watched a friend get coated in the Tunisian desert in this manner. He did not have a good day.
