Question for making briskets a day or two ahead of serving

I am making 4 briskets for a high school grad party next Sunday. Because of timing of all the things happening, I want to make them a couple days before.

I’m pretty sure they would be okay to refrigerate for 2 days in foil and then heat up in the oven on day of the event. Has anybody done this before? I don’t want to do them too early to where they need to be frozen. Also don’t want to screw up a bunch of brisket and pulled pork for this party.
