Recs Needed -- Tuscany

[Macabi Horn]

Planning a trip to Italy and need recommendations. Here are the baseline details:

• We like to hang with the locals.
• We don't want to go to Rome.
• We like good (casual) food, good wine in small, loud bustling eateries.
• Driving, training and flying to and from is not a problem.

The one definite plan is to spend 3 or 4 days in Florence and 3 or 4 days in the Tuscan countryside. Any recommendations on parts of town in Florence or towns in Tuscany would be great.

Now....which way do we go in May? North or South?

If you know San Sebastian, Sevilla and Granada, Spain....that's what we are thinking.
