Smoking a chicken today...

Every recipe I’ve seen says it takes 4-5 hours to smoke a chicken. It’s at 162 degrees in the thigh an hoir and a half before dinner. Anyone have any thoughts on how to hold the temp?

What recipes are you reading? Because they are way wrong on temp.
 
Internet stuff. What should the temperature in the thigh be? It should be 165 degrees I think.

Breast is 165. Thigh 170-175. How low a temp were you smoking? Honestly a 12-15lb turkey smokes in about hours.
 
Lawrey’s salt and vegetable oil rubbed inside and out. Smoke. Spritz with water to keep in moist. The ladies will love it.
 
Try the Green Circle chicken from Central Market. It’s much better than the other chickens IMO
