What’s up fellas? I brined my brisket for 24 hours and dropped it in the smoker this morning. Everyone I’ve ever smoked with has always wrapped their brisket, but now I’m seeing a lot on the net that say it’s better if you don’t. I know that there are some backyard professionals on Orangebloods, y’all help me out! Do I wrap after four hours, or just let it keep on smoking low and slow?
