My wife and I are going out to Vegas for the last Eagles show on April 12th at the Sphere. It's just 2 of us and we haven't been to Vegas in 6 or 7 years.
There are several good threads about Vegas restaurants. However, I tried to book three of the recommendations (Carbone, Mayfair, and brunch at Bouchon) and there is zero availability at any of them. I checked the furthest out you can book (August 9th) with Carbonne and Bouchon (brunch) and there was no availability on the weekend. I find this hard to believe.
What am I missing? Is there some secret way to book these places?
Any recommendations of places that don't require you to jump through all sorts of hoops?
