Oh im sure she's been planning this for a while, makes sense. But even if the video was public, i dont see why it still couldnt be admitted as evidence in a civil hearing.
Maybe I'm old-fashioned, but no. You don't, "lay her ass out." You fend her off with the minimal effort possible, without harming her.
Imagine your pastor or priest suddenly had a neurological issue, and came after you, or if your child did. That's how you handle it.
The only exceptions are if she's shooting at you, or if she's trained in martial arts or a boxer or bodybuilder and about to clean your clock. Even there, you do the minimal needed to defend yourself.
Regardless nothing will come of this other than some serious egg on faces and distractions. This won't topple Stoops, and Mixon has already been "punished"
They would do more damage to themselves if they try to pull a Goodell and punish him again. Ray Rice won his lawsuit against the NFL. It could harm Mixon's NFL prospects if the video is leaked at the wrong time. Not sure where he sits on the NFL draft potential, but this could push a mid to late rounder to undrafted especially now in the devalued RB NFL.

If it happened right before the draft maybe. For Mixon this happened on his 18th birthday, before he ever suited up for a single practice and by the time he does get drafted, it'll have been three years (maybe 4) since the incident. Usually teams avoid people with legal issues because they tend to be troublemakers who continue their behavior. If Mixon is three years behind the only questionable decision he's made, I think an nfl team will take a chance on him, no problem. I mean look at tyreke hill, the guy from osu who on multiple occasions beat and kicked his pregnant girlfriend. Not once, not twice. His offense makes Mixon's incident look like a walk in the park. Chiefs drafted him, and he only played one season of big boy football.
