I know about the legendary LHR chicken fajitas (HEB seasoned chicken fajitas and soak in pineapple juice, orange juice, lime juice and brown sugar mixture) but has anyone done anything to the mi tienda brand of beef fajitas to jazz it up?

I love the southwestern flavored from central market but don’t want to make the drive.

Get some Brine Time from Wayward Gourmet and brine for 12 hours with a cup of Allegro Spicy Marinade in the brine. It’s a game changer. I’d put these up against any fajitas anywhere. That brine does amazing things to any meat.

Try marinading them in Thousand Islands Robusto Italian dressing for a night.

If you can find it, Allegro makes a good smoky marinade, too.
 
The papas fajita marinade was revealed earlier this year by a poster that used to work there. I tried it and it was excellent with flank steak! It’s 1/2 soy sauce and 1/2 pineapple juice. I added a little water so it wouldn’t be so salty. I only marinade for about 15-20 minutes to avoid it getting mushy. Also, I added a decent amount of fiesta brand fajita seasoning as I grilled them.

Don’t have time for the brine but sounds amazing, will give it a go another time. Is it too spicy for kids?
 
Skirt steak, season with Uncle Chris's. Cook on 300 for about 10 minutes a side. Then wrap in foil and cook at 200 for about 30 minutes. Thank me later!

The best marinade I have found so far. I have used this with chicken and beef and its fantastic. I would recommend New York Strips instead of the skirt or flank steaks that are the typical fajita cut. Skirt and flank tend to be a bit more on the chewy side, and the strip is perfect.

I have marinade both the beef and chicken for 8hrs, then grilled on the green egg along with the peppers, onions, and whatever else fixings in a cast iron.

1/4 cup lime juice
1/3 cup water
2 Tbsp Olive oil
4 cloves of garlic, crushed
2 tsp soy sauce
1 tsp salt
1/2 tsp liquid smoke
1/2 tsp cayenne pepper
1/2 tsp ground black pepper

Got a link for the specific recipe? I'd be curious to try whatever they used for beef.

Is that supposed to say pineapple apple juice as in the 2 mixed together or a typo?

It’s on waywardgourmet.com. It does wonders with chicken and anything else as well. It’s a total game changer. One jar makes up to a gallon so it’s very cost effective as well.

If there is a la michoacana near you, just go buy their marinated skirt steak at the near counter. I’ve given up trying to make anything better.

The seasoned skirt steak from Costco is amazing for fajitas. I just throw them on a cast iron with some veggies and they always come out great.
2nd person I've heard lately to say this. Actually picked some up recently and have yet to grill.
 
From Mexico and they r killer. Marinate in a ton of lime juice, beer and the seasoning of your choice. Marinate for at least 12 hours. Grill on charcoal. Simple and amazing.
 
So what type of meat do people prefer for beef fajitas? Where do y’all cook them (grill, stove top, oven). Do you cook the meat first and then slice it or slice first?

Go to a butcher and ask for the Bavette cut - it’s thicker flank steak and what a lot of higher end restaurants use for their fajita meat. It’s a game changer compared to what is sold in grocery stores.

Its the pineapple enzymes that turn the meat into bubblegum. I have found if you add the pineapple a little later, you can marinate longer with the other marinade ingredients.

@MauiHorn do you know the real recipe? Found Waygu flank steak at HEB and don’t want to fvck this up? Bought soy sauce, apple juice and pineapple juice. How long should I marinate?
 
Yes, indeed that meat is awesome.., Called "Arrachera" - available at Costco and you may never buy another type of beef fajita meat.

Try it out. They have it at both Costco locations in Plano. I used to buy from Hirsch's and season it myself but this is much better.

City Market in Schulenburg. Take out of packaging and place directly on grill. Best beef fajitas anywhere, IMO.
