Beef fajitas

What's the ratios for the juices and the brown sugar? That marinade isn't in the Classic Recipes Thread.
I usually do 2 large naval oranges, 6 limes, 12 ounces of pineapple juice and half a cup of brown sugar.

I'm a fajita newb, I'm breaking in my new Blackstone, and I have a stupid question. I used a pineapple soy marinade on some pre-tenderized (not seasoned) skirt steak. Better to cut steak before hand or blast for a minute or two on each side (it's real thin)? I can't imagine much of a flavor difference, and I'm guessing the only difference is I wouldn't need a rest period for pre-cut.

I only cut when I serve the skirt steak.
 
I know about the legendary LHR chicken fajitas (HEB seasoned chicken fajitas and soak in pineapple juice, orange juice, lime juice and brown sugar mixture) but has anyone done anything to the mi tienda brand of beef fajitas to jazz it up?

I love the southwestern flavored from central market but don’t want to make the drive.

For beef fajitas I use the following:

1. Lea & Perrins
2. Lime Juice
3. Pineapple Juice
4. Fiesta Fajita Seasoning
5. Adobo Seasoning

I combine all of the ingredients and then seal the meat and brine with a Food Saver bag and marinate 24-48 hours.

As mentioned above the skirt steak at Costco is the bomb digity.
 
If you have a local butcher, see if they have a bavette cut. It’s bar none the best for fajitas.

@MauiHorn do you know the real recipe? Found Waygu flank steak at HEB and don’t want to fvck this up? Bought soy sauce, apple juice and pineapple juice. How long should I marinate?
We’ve bought the waygu and compared it to the HEB brand of seasoned beef fajita meat. We favored the HEB brand (not the Hill Country brand) actually.

I’d agree it turned out good but not for the price.

If there is a la michoacana near you, just go buy their marinated skirt steak at the near counter. I’ve given up trying to make anything better.
